Paolo Minelli

Executive Chef of Maison Delano Paris, Paolo Minelli celebrates at Delano Café — awarded two Ecotable stars — the Mediterranean flavors of his childhood.
A graduate of the Instituto Superiore di San Pellegrino Terme, Paolo honed his craft in Michelin-starred kitchens in the south of France, including the Hôtel du Palais in Biarritz and the Palme d’Or in Cannes, before joining the teams of Restaurant Pur at Park Hyatt Paris-Vendôme under the mentorship of Jean-François Rouquette.
A Maître Restaurateur and a member of the Collège Culinaire de France since 2025, he is now committed to championing artisanal and sustainable gastronomy.
